During the cutting process, high loads act on the cutting system. Centrifugal forces occur due to the rotation of the knives. The feed of the cutter bowl and the resistance at the sausage meat exert lateral forces on the cutter knives. Each knife is bent back and forth up to 4000 times per minute when entering the sausage meat and when leaving the cutter bowl by up to 20 mm.
This places an enormous strain on the knives and the clamping system. In addition, galvanic flows occur which, in conjunction with chemical reactions caused by salt, spices and meat juice, can lead to corrosion at the clamping areas of the knives.
